Pricing freelance projects – going a little crazy

Hi all, so I routinely have to build quotes for potential clients. Sometimes the projects are pretty clear and I do flat fees – I know how much this or that takes me in terms of hours and it all works out. But sometimes…. there are way too many variables and for smaller projects, it can be a little hellish. Makes me think if it’s even worth it to take on those projects

Any advice? How do you deal with smaller projects (under $500)? I’m a graphic designer if that helps and I do a lot of email design for e-commerce.

PS – charging hourly is not an option, I don’t want them to know my hourly rate.
